The Challenge
As sustainability took center stage across the hospitality industry, the Renaissance Indianapolis North team sought meaningful ways to reduce their environmental footprint without compromising the guest experience.
Despite its high standards of service and culinary excellence, the Renaissance Indianapolis North team identified significant volumes of banquet and restaurant food waste as an area needing attention.
Like many full-service properties, they sought a solution that would reduce landfill waste, enhance community engagement, and create new opportunities to reinforce their brand identity, all without increasing operational burden.
The Solution
The Opportunity:
During the Green Key Global Eco-Rating Certification process, the hotel conducted a sustainability audit, which revealed the need to formalize waste management and explore opportunities to integrate sustainability into guest-facing experiences. The team also recognized an opportunity to build a locally rooted brand story through food and beverage innovation.
The Outcomes:
- Food Waste Composting Partnership: As a direct result of the Green Key audit, the hotel partnered with a local composting company to collect and process post-consumer and banquet food waste. In just 5.5 months, the hotel diverted 1,585 pounds of food waste from landfill, averaging 288 pounds per month. Approximately 40% of this is converted into compost and repurposed for use on local Indiana farms, closing the loop between hospitality and agriculture.
- Circular Bourbon Program: The hotel collaborated with West Fork Whiskey, a local distillery that sources all its corn from Indiana farms. Together, they created a private label bourbon, exclusive to the hotel. The custom-designed bottle features imagery of Indiana farms, a sustainability badge, and storytelling that celebrates their commitment to circular economy principles.
- Signature Sustainable Cocktail: The culinary team crafted a bespoke cocktail featuring charred Indiana corn soaked in local honey, blended with their custom bourbon and garnished with locally sourced cherries. The cocktail is sold for $16 and has become a signature experience, with 100 cocktails sold monthly, thereby enhancing both food and beverage (F&B) revenue and guest engagement.
“Green Key Global’s certification process gave us clarity. Composting wasn’t on our radar until the audit helped us see the opportunity, and now, it’s part of our identity,” said Michael Balcom, General Manager, Renaissance Indianapolis North
The Results
These initiatives brought the hotel’s sustainability strategy to life in measurable, high-impact ways, connecting operations, guest experience, and environmental stewardship under one circular model. In just 5.5 months, the results were clear:
- 1,585 lbs (0.2tons) of food waste diverted from landfill
- ~634 lbs of compost produced (40% yield) and used by local farms
- $1,600/month in new revenue from sustainable cocktails
- 10 bottles/month of private-label local bourbon used in branded beverage experiences
Together, these efforts add up to a meaningful environmental impact*:
- Equivalent to planting 10 trees
- Offsetting 1,572 miles driven by an average passenger vehicle
- Saving 71 gallons of gasoline
- Preventing the burning of 700 pounds of coal
- Generating enough energy to charge over 77,000 smartphones
And all of this was achieved in just 5.5 months. These numbers demonstrate how small operational shifts can yield significant environmental and financial returns when approached with creativity and commitment.
According to Klas Takkel, Director of Commercial Operations, Pyramid Global Hospitality, “We didn’t want to stop at waste reduction. By tying sustainability into a guest-facing F&B story, we’re helping guests taste our values, literally.”
